A Slice of Summer: The Swedish Midsummer Cake (Jordgubbstårta)

Every June in Sweden, Midsummer marks the longest day of the year, a celebration of sunlight, flowers, and fresh berries. And at the heart of the table? Jordgubbstårta, a simple, beautiful strawberry cream cake that tastes like summer in every bite.

What You’ll Need:

  • 3 light sponge cake layers ("sockerkaka") 

  • 2 cups heavy cream (whipped with a touch of vanilla and sugar)

  • 1½ cups vanilla custard or pastry cream

  • 3–4 cups fresh strawberries, halved

  • Optional: mint leaves or cute flowers for garnish

To Assemble:
Layer the sponge with custard and whipped cream, then top generously with fresh strawberries. Let it sit in the fridge for an hour so the flavors settle. Serve barefoot in the grass.
